Pumpkin Cream

4 cups (600 g) pumpkin

2/3 cup (100 g) onion

2/3 cup (100 g) red pepper

1 tsp (5 g) ginger

1 cup (250 ml) oats cream

1 tbsp (15 ml) olive oil

pumpkin, sunflower, sesame and poppy seeds.

STEP 1

It would be perfect if all the ingredients came from organic farming.

STEP 2

Peel and large chop the pumpkin, onion and the red pepper. Remove all the pepper seeds.


STEP 3

Shred the ginger.

STEP 4

Place the pumpkin, onion and red pepper in a cooking pot and add 4 cups water. Add salt to taste. High-heat until it boils, then turn it down to a simmer. Cover the pot and allow to cook for 30 minutes.

STEP 5

Drain the vegetables and keep ½ cup (120 ml) of the cooking water.

STEP 6

Add the ginger, oats cream, olive oil and the cooking water.

STEP 7

Mix all the ingredients with the hand blender.

STEP 8

Serve the pumpkin cream in bowls and sprinkle the seeds on top.
