Carrot Bites

To make the cashew cream:

1 cup (150 g dry) raw cashew

2 tbsp (30 g) rice syrup

1 tbsp (15 ml) coconut oil

STEP 1

It would be perfect if all the ingredients came from organic farming.

STEP 2

The night before place the raw cashew on water and leave them there all night. Next morning place all the ingredients in the hand blender’s glass and blend until you get a dense cream. Keep this cream in the fridge for later use.

To make the carrot bite:

3 cups (450 g) carrots

1 cup (150 g) walnuts

2/3 cup (100 g) dates

1/3 cup (50 g) dry peaches

cinnamon

STEP 1

It would be perfect if all the ingredients came from organic farming.

STEP 2

Peel and grate the carrots.

STEP 3

Break the walnuts.


STEP 4

Place a little bit of everything in a food processor and process until they are very well diced. Do not make a paste.


STEP 5

Press the mixture with your hands and you will see how they stick together. Make little balls and the flatten them as thick discs.



STEP 6

Place the cashew cream inside the pastry bag and cover the carrot bites with the cream.
